love the sunny side of life

This is a blog about the lovely and sunny lifestyle of the French and Italian Riviera. I will write about great cafes and restaurants in the area, beautiful and exciting places to visit, events in the area to attend to, the best food recipes of the Mediterranean cuisine and generally how to enjoy life to the fullest here. I am a Scandinavian woman with an half-italian family and ever since I moved down to Monaco a few years ago I fell in love with this beautiful region. A different lunch place

We had a fun “move-in-lunch” today in Monaco! A friend has a new apartment in one of the most gorgeous buildings in Monaco with a view to die for! Even though we were a bit short on terrace furniture, sitting on the aircon with a delicious salad works just fine when you have a view like this :)

Time for pesto! We make it the real Italian way:
*Fresh basil
*Loads of garlic
*Pine nuts
*Olive oil (we use our own olive oil made by our family in the Ligurian mountains/ olive mills)
*Parmiggiano cheese 
*Pecorino cheese
*Salt & Pepper

You have to mix it together and taste it - Italians have no measurements :)

Then you heat up a fee greens beans that you cut in half and together with a few potatoes that you clean and cut in four in water until it boils. Then when the water boils add the special trofie pasta. When the pasta is ready take out the water. Here you can try two different ways: either just mix the fresh pesto with the pasta, beans & potatoes. Or, you can leave a tiny bit of water in the pot add the pesto and let the pasta boil a few moments in the water & pesto and then serve. You chose what you prefer 👌
